Norwegian Apple Cake
- 2 eggs
- 100g butter
- 175g plain flour
- 3-4 apples
- 225g caster sugar
- 150ml milk (I like to add a drop of cream!!)
- 3 x 5ml spoon baking powder
- Grease and flour an 8 x 12 inch baking tin.
- Whisk the eggs & 200 g of the sugar until thick and creamy.
- Put the butter & milk into a pan. Bring to the boil & stir, still boiling into the eggs & sugar.
- Sieve in the four & baking powder & fold carefully into the batter (squidge out any lumpy bits with a wooden spoon).
- Pour the mixture into the tin.
- Peel, core & slice the apples & arrange them over the batter.
- Sprinkle with the remaining sugar (I like to sprinkle the top with brown sugar).
Bake @200 C/Gas mark 6 for 20-30 minutes until well risen & golden brown.
Serve hot or cold, great with cream, ice cream or my favourite; creamy custard.
