Sue's Recipe's - Apple Cake

Norwegian Apple Cake

  • 2 eggs
  • 100g butter
  • 175g plain flour
  • 3-4 apples
  • 225g caster sugar
  • 150ml milk (I like to add a drop of cream!!)
  • 3 x 5ml spoon baking powder

  1. Grease and flour an 8 x 12 inch baking tin.
  2. Whisk the eggs & 200 g of the sugar until thick and creamy.
  3. Put the butter & milk into a pan. Bring to the boil & stir, still boiling into the eggs & sugar.
  4. Sieve in the four & baking powder & fold carefully into the batter (squidge out any lumpy bits with a wooden spoon).
  5. Pour the mixture into the tin.
  6. Peel, core & slice the apples & arrange them over the batter.
  7. Sprinkle with the remaining sugar (I like to sprinkle the top with brown sugar).

Bake @200 C/Gas mark 6 for 20-30 minutes until well risen & golden brown.

Serve hot or cold, great with cream, ice cream or my favourite; creamy custard.
